Jams, marmalades and confectionery sauces.
HRS is a worldwide specialist in designing machinery and processes for manufacturing jams and confectionery sauces, with or without particulates. Jams and fruit bases are produced continuously thanks to our revolutionary thermal treatment system based on the Unicus® Scraped Surface Heat Exchanger.
The Unicus® is used to heat and cook the fruit and other ingredients working as a reactor in which the product is cooked and pasteurised continuously.
The success of our technology for jams and confectionery sauces processing plants is based on our scraped surface heat exchangers, piston pumps, evaporator technology and our aseptic filler. Combining them makes it possible to process the fruits minimizing the undesirable thermal effects (organoleptic and/or nutritive losses) and get a reliable, hygienic and well controlled filling process.
Our patented Unicus® Scraped Surface Heat Exchangers are the most suitable heat exchangers for handling highly viscous fruit sauces and fruit fluids with particulates. Furthermore, our piston pump (HRS BP Series) is the most suitable pump for handling fluids with particulates and/or fibers towards the HRS Aseptic Filler.
The technological solution of HRS Heat Exchangers cover from the processes of preparation, blanching, pasteurisation up to the aseptic filling.
Advantages of our systems and processes:
- Continuous production of jams and preserves.
- Better product quality. The thermal treatment is rapid because of the agitation and mixing effects of the dynamic elements within the Unicus®. In addition the treatment is homogenous and effective because the mixing within the heat exchanger is complete. The result are more natural jams and preserves with more fruit taste.
- Saving in pectin.
- The heat exchanger does not get dirty allowing production runs to be as long as required by the operator.
- Low product loses due to interfaces because the needed volume for the thermal treatment is low.
- Hygienic reliability and simple cleaning-in-place (CIP) routines.
