The correct combination of processes and equipment depends on lots variables. Just to name a few, we can cite the kind of vegetables to be processed, their freshness, the harvesting and delivery methods, the incoming and outgoing percentage of solids (as fibers and stones or soil particles), discharge temperature, concentration, finishing, boiler capacity, pressure and volume, type and dimensions of tanks and ambient storage temperature range. There are, however, some steps are common to different processes and HRS has years of experience in applying the appropriate technology for your particular application.

Micro-organisms in a healthy growing state may contain in excess of 80% water. They get this water from the food in which they grow. If the water is removed from the food it also will transfer out of the bacterial cell and multiplication will stop. Partial drying (concentration) will be less effective than total drying, though for some micro-organisms partial drying may be quite sufficient to arrest bacterial growth and multiplication. Besides all this, if we add the benefits of aseptic filling, we achieve a very long shelf-life product.

HRS has successfully delivered turn-key plants for vegetable purées and concentrates for:

  • Gazpacho.
  • Tomato paste and concentrate.
